This vegan egg salad is WAY easier than cooking and peeling regular eggs. It also takes less than half the time since no cooking is even involved! The texture of the tofu combined with the eggy flavor of the kala namak will have your non-vegan friends fooled into thinking this is real egg salad. This vegan egg salad is perfect on toast or crackers paired with some veggies of your choosing!
1 block (14oz) firm or extra-firm tofu
1/4 cup vegan mayonnaise
1 tsp dijon mustard
1/2 tsp kala namak (aka: "black salt")
1/2 tsp black pepper
1/4 tsp turmeric
1/4 tsp paprika
1/8 tsp celery seed (optional)
Sandwich topping ideas:
Cucumber, red onion, tomato, spinach, avocado, Sriracha, vegan bacon.
Begin by draining and pressing your tofu. Drain your tofu and remove it from the package.Gently wrap it in a clean kitchen towel. Place a dinner plate on top and let sit for 3-4 minutes.
Meanwhile, begin assembling the rest of the "egg" salad by mixing the other ingredients together in a large bowl.
Once the tofu has drained, place the block on a cutting board.
Slice your tofu into small cubes and place in the large bowl with the other ingredients.
Gently mix to combine.
Taste and add any more seasonings as needed.
Serve on toast, crackers, or make a sandwich!
Tips and Tricks:
This gets better the longer it sits! I usually try to refrigerate it for 30 minutes before serving, but I usually can't wait that long.
If you don't have kala namak (black salt) than you can use regular salt instead. Just note that the kala namak is what gives it the eggy, sulfur flavor. If you want to make or experiment with vegan tofu eggs more, I'd highly recommend buying some here on Amazon!
