Who else is craving warm summer days on the beach? This recipe is packed with beneficial ingredients for your skin, gut health, and energy levels. This vegan bikini-ready salad will not leave you bloated, but will give you a nice burst of energy that you'll need for sitting in your beach chair for the afternoon!
1 bag (5oz) spring lettuce mix
1 small cucumber, diced
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1/2 one small red onion, diced
2 stalks celery, diced
1 cup of grape tomatoes, halved
1 cup of chickpeas, drained
15 Kalamata olives, halved (optional)
4oz vegan feta crumbles (optional)
1 tbsp fresh garlic, mined
1 tbsp fresh dill, minced
2 tbsp fresh shallots, minced
2 tbsp extra virgin olive oil
1 small lemon, juiced
1 tsp dijon mustard
1 tsp agave nectar
2 tsp red wine vinegar
Place the spring mix into a large bowl.
Dice all the veggies and add to the bowl.
Top with feta cheese crumbles.
Make the dressing by combining all the ingredients in a small mixing bowl.
Using a small whisk, stir together until ingredients are blended.
Drizzle on top of the salad before serving.
Tips and Tricks:
This is a fantastic beach bikini-ready meal! While it may seem high in calories, there are lots of benefits. The cucumber, pepper, olive oil and lemon benefit your skin, the chickpeas provide protein and energy, and the combination of the veggies reduce bloating, encourage detox, and prevent snack-cravings.
Make salad and dressing ahead of time, but keep separate. Package the salad into individual containers or mason jars. Dress the salad a few minutes before you're ready to eat! This is great for meal-prepping.
