This is one of the easiest and fun dessert recipes I've created! By using premade cookie dough and ice cream, this recipe is quick to put together and fun for the whole family. The Sweet Loren's Chocolate Chunk Cookie Dough was a great choice for these cookie cups. The dough is easy to work with when it's at room temperature, bakes quickly, and creates the perfect chewy cookie. And I won't judge if you break off some of the dough and enjoy it raw like I did :)
I was provided with a free package of cookie dough, but can't wait buy their other flavors. I bet this recipe would be awesome with their Fudgy Brownie dough!
Ingredients:
1 package of Sweet Loren's Chocolate Chunk Cookie Dough
1/2 pint of vegan ice cream (I went with So Delicious Vanilla Bean)
1/4 cup vegan chocolate chips
Directions:
Preheat your oven to 350° F. Lightly grease a mini muffin pan and set aside.
Make sure the cookie dough is defrosted and at room temp so it's easy to work with.
Start by making the cookie cups.
Place 1 ball of cookie dough into each muffin opening.
Using your fingers, press the cookie dough down and up the walls of each opening, making sure they're spread out evenly.
Bake the cookie cups for 10-12 minutes.
Remove the cookie cups from the oven and let them rest in the pan for 10 minutes. Don't worry if they look super puffy, they will deflate and look more like cups as they cool.
Carefully remove the cookie cups from the pan and set them on a drying rack to cool.
Meanwhile, melt the chocolate.
Place the chocolate chips in a small microwave-safe dish.
Microwave the chips on high for 30 second bursts, stirring in between, until the chocolate is just melted.
Once the cookie cups are cooled, it's time to assembly your cups.
Using a 1 tbsp measuring spoon or mini ice cream scooper, fill the cups with 2-3 tbsp of ice cream.
Pro tip: rinse/dunk the measuring spoon or ice cream scooper in some room-temp water in between each scoop so the ice cream comes out flawlessly.
Drizzle the melted chocolate overtop. It should harden almost immediately due to the frozen ice cream.

Tips and Tricks:
If you can't find the Sweet Loren's cookie dough, any type of vegan cookie dough will do.
Store the leftover cups in an air-tight container in the freezer. Let the frozen cups sit out for 2 minutes before enjoying, or slice them into halves to enjoy them more quickly.
