Avocado toast is a staple in my diet, but I got tired of my plain old Sriracha topping. So I started experimenting with veggies. After trying many different combinations, I learned that sauteed mushrooms and chickpeas are at the top of my favorites list. The salty combination along with the fresh avocado and crunchy toast is something I actually crave, and I'm sure you will too after trying this!
2 medium avocados
1 container (8 oz) of baby bella mushrooms
1/2 can of chickpeas, rinsed
2 garlic cloves
1 tbsp olive or grapeseed oil
1/2 tsp onion powder
1/4 tsp oregano
1/4 tsp black pepper
Salt (to taste)
Nutritional yeast (optional)
4 slices of fresh bread of your choice, toasted
Heat a frying pan on medium and add the oil.
Wash and chop your mushrooms, then dice the garlic.
Add the mushrooms to the frying pan and mix so they get coated in the oil. Cook for a few minutes until they start to soften. ○ You can also use water instead of oil. Just keep adding a splash at a time if the mushrooms are sticking to the pan.
Add in the garlic, chickpeas, and spices.
Cook until the mushrooms and chickpeas are softened.
Meanwhile, toast your bread and slide your avocado.
Mash 1/2 of an avocado on each piece of toast.
Sprinkle with a little nutritional yeast (optional).
Top with mushrooms & chickpeas.
Sprinkle with a little bit more salt, oregano, or any other herbs you'd like (optional).
Tips and Tricks:
