Since we work remotely and are staying in different Airbnb's each month, we've had to learn how to cook without main kitchen appliances or find small, travel-sized ones to bring with us. This Magic Bullet Mini is easily one of my newest favorite purchases since our current Airbnb in Utah doesn't have a blender.
I've had to buy gallons of pre-made smoothies, parmesan cheese, vegan butter and hummus that all come in plastic tubs, and completely living without pesto since all the store brands contain dairy. I've felt horrible that my plastic waste has unintentionally increased. Not cool!
But NOW I've been able to make smoothies, pasta sauces, hot soups, pesto and more with this little guy. It's surprisingly strong and not super loud, although I haven't tried putting ice in it yet (and I probably won't... not a fan of ice in my smoothies). It's helping to reduce my plastic waste and enjoy fresh homemades.
It also comes with a little booklet that contains a few vegetarian and vegan recipes too! I haven't tried any of them, but I'll be posting a few of my own recipes in the upcoming weeks since I have a back-log of meals to make now that I can blend once again.

5.3oz dairy-free vanilla yogurt (I uses the Silk almond milk yogurt)
1/2 cup fresh strawberries
Juice from 1 lemon wedge
1 tbsp flax seed (optional)
Toss everything into the large Magic Bullet Mini cup.
Blend until smooth and creamy.
Replace the blade with the on-the-go lid and enjoy!
