Yes, I know what you're thinking. Microwaved sweet potato chips?! This must be fake... But it's not!! These turn out super crispy, fresh, and have only 4 ingredients. I love making these chips whenever I have a random sweet potato that I don’t know what to do with.
Ingredients:
1 medium sweet potato (try to use a thin one)
1 tsp extra virgin olive oil
Salt & pepper (to taste)
Directions:
Slice the sweet potato by using a mandolin on the thinnest setting. ○ If you do not have a mandolin, slice them using a knife as thinly as possible. It’s okay if not every piece is the same size.
In a bowl, coat the slices of sweet potato in olive oil. Add salt and pepper to your liking.
Cut a piece of parchment paper to fit on a microwave-safe plate.
Place the sweet potato chips on the paper. Make sure the pieces are not touching.
Microwave for 3-4 minutes until brown. ○ After the first 2 minutes, check after every 30 seconds to make sure they don’t burn.
Take the chips off the parchment paper and lay on a drying rack for 5 minutes.
Enjoy immediately!
Tips and Tricks:
These do not store well. They will get soft as time passes so unless you want soggy sweet potato slices, enjoy them immediately.
Try adding garlic powder, onion powder, or a sprinkle of cinnamon before cooking!
