Vegan Apple Cinnamon Pancakes

Vegan Apple Cinnamon Pancakes - dairy, egg, soy, refined sugar free!

Sweet, fluffy, mouth-watering pancakes that are dairy, egg, soy, refined sugar free. These vegan apple cinnamon pancakes are a weekly occurrence in our kitchen! They pair well with any fruit: apples, strawberries, bananas, berries. They're quick and easy to make, allergen friendly, and are pretty fool-proof! Try these pancakes during your next Sunday morning.


  • 2 cups white flour (you can also use whole-wheat flour)

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1 tbsp cinnamon

  • 2 cups unsweetened non-dairy milk (I use almond)

  • 1 tbsp pure maple syrup

  • 1/2 cup unsweetened apple sauce

  • 1 tsp vanilla extract (optional)


  • Place all the dry ingredients in a bowl and combine evenly with a whisk or fork.

  • Add the wet ingredients and whisk until everything is combined (do not over-stir so they stay nice and fluffy).

  • Let the batter sit for a few minutes until it begins to rise slightly.

  • Meanwhile, heat a frying pan on medium. If you do not have a good non-stick pan, melt a tbsp of vegan butter in your pan.

  • When the pan is nice and hot, scoop about 1/4 cup of batter into the pan. I can usually fit about 2-3 small pancakes in my 12" pan.

  • Once they begin to bubble and the edges look cooked, flip them over.

  • Cook another 1-2 minutes until golden brown and remove from the pan.

  • Repeat with the rest of your batter.

  • Top with vegan butter, syrup, cinnamon, and some fresh fruit!


Tips and Tricks:

  • These pancakes freeze really well! I always make a ton so that I have lots of extras, and freeze them with a slice of parchment or wax paper in between each one. Pop them in the microwave for 1-2 minutes for a quick breakfast during the week!

  • You can also add some shredded apple pieces into the batter. Cook them slightly longer so that the moisture evaporates from the pan.
